I played the first game, kinda liked it, and didn't bother with the rest of the series after that. But I hear it goes downhill after 1, so I don't know if I'll ever end up checking the rest out.

I really liked Mass Effect 2, but at the same time I thought it was too streamlined. The RPG-elements were non-existent, save for the dialogue choices and the different outcomes, which is good enough for me, I guess.

I never beat it though. I was hoping to get back into it before ME3 came out but NOOOO I just HAD to loose all my saves.

Do you have to have your save files though? I thought the game gave you dialogue options to determine what "path" you took in the "previous story" if you didn't have a save.

Mass Effect 2's the one that I think will be most fondly remembered. It's the one that hit the perfect cord of mass appeal and fan pleasing. It is also the one that went full Gears Effect. Not necessarily a bad thing in my opinion though. It's an Unreal TPS, so why not copy from the best Unreal TPS? There were still enough RPGing that it didn't fuck shit up.
